Marcel is the Patron Chef, the kitchen is his domain. If you say Marcel, you are saying fish, shellfish and crustaceans. And sauces. He prepares everything himself. He prefers for the carefully chosen ingredients to retain their original values as much as possible, but does like to add his own flavour signature. The classic French cuisine is his base – he still knows how real sauces are made – but equally he is a curious autodidact too, always coming up with new ideas. This is exactly what makes IDRW’s kitchen so surprisingly individual and unique.
